Everyone asks WHY? Why did you start Paleo?

I would like to share with you the WHY.

I did 30 crazy things for my 30th Birthday. (30×30 I called it) My life was so crazy and so unbalanced for so many years. I worked non stop, never slept, pushed in every area of my life, till one day my body just gave out. I was 29 laying in a hospital bed when I realized that I needed to make some changes. Unfortunately this was still not enough to get my attention. I was about to have everything I knew taken away all at ONCE. This is what FINALLY got my attention.

So for my 30th year I did 30 life changing things. Did a safari in Kenya, Rode an Ostrich,Went to Uganda to do missions work, Learned acro yoga, Started my blog , MOVED TO NYC, and Started 30 days of Paleo.

I will have to say that Paleo changed my life the most. I got healthy and realized that I had to share this with others. I put this blog together and had my sister (Kim) help. Every morning I wake up and start to answer questions. I am so blessed to be part of so many peoples stories. Every day I am thankful for the way my life was changed. Yes, it was hard and NO, not fun at all. But looking back I know it was the greatest blessing of my life.

Paleo Caveman Sweet Potato Casserole

  • 3 pounds of lean ground beef, lamb, bison, or turkey
  • 10 eggs
  • 3 large sweet potatoes
  • 1 large white onion
  • 1 large red onion
  • Spices: Cayenne, paprika, garlic, black pepper, oregano
  • 1 large deep rimmed skillet or pan
  • Coconut oil to grease your slow cooker




1. Peel your sweet potatoes and microwave them for 2-3 minutes to soften them slightly.
2. Slice your sweet potatoes into 1/8″ slices.
3. Dice your onions into large chunks and add to the pan with the ground beef. 
4. Season the beef as you wish. I used a generous amount of cayenne, paprika, black pepper, garlic powder, and oregano.
5. Cook until beef is fully browned and onions are translucent. 
6. Beat the 10 eggs in a bowl, blender, or food processor. Add some cayenne and paprika to your egg mixture.
7. Grease slow cooker with coconut oil. 
8. Line the bottom of slow cooker with slices of sweet potato. Just enough to cover the bottom. 
9. Spoon in a layer of seasoned beef onto the sweet potatoes. 
10. Repeat until you use up everything.
11. Once you have finished layering, pour egg mixture over the top. This will sink through to the bottom. 
12. Cook on high for 3 1/2 – 4 hours. I kept an eye on it and made sure the top layer of sweet potato was soft.
13. Serve and enjoy! Servings 7-8
