Chicken Salad Lettuce Wrap Chicken Salad Lettuce Wrap

Ingredients:

  • 2 5oz grilled chicken breasts, cubed
  • Half of a granny smith apple
  • 1/4 cup of walnuts
  • 1/4 cup of mayo (I use vegenaise)
  • handful of raisins (optional)
  • Romaine lettuce

Directions:
1. Season chicken breast with salt and pepper. 
2. Grill chicken breast. 
3. Then refrigerate chicken breast so that they are cool.
4. Cut chicken breast into cubes and place in a bowl.
5. Dice granny smith apple and add to a bowl.
6. Then add 1/4 cup of walnuts to the mix.
7. Then add 1/4 cup of mayo and mix.
8. Wrap chicken salad in Romain lettuce into a wrap. (Make sure to tuck each end like a burrito)
9. Cut on a diagonal and serve.

    Hi Robin, so I just started the 30 day challenge an I can already feel the difference it is making. I was wondering if it would be okay to use Greek yogurt instead of mayo on the chicken salad wraps?

      Greek Yogurt and Mayo are both not paleo. I would try out Vegenaise instead.

    I am looking forward to starting this 30 day challenge. I too have suffered a great of digestive issues, to the point of losing my large intestine. My research has pointed time and time again to the Paleo way of life. Thank you for such a detailed blog.

      No, I would suggest using organic chicken or as close to that as possible. Canned chicken has a ton of additives that are just plain bad. Stay Strong, Robin

    Hi Robin, I love eating a Paleo diet, but I have a person in my family who can’t have tuna or salmon. Can you use A white type of fish instead?

      I would suggest just doing salmon or Tuna. Here is why. These fish are very lean, they have tons of great fats, and they will give you the best results. The other fish you mentioned will not do this for you. The fish like tilapia are bottom feeders meaning that they are not good for you. They do not have the health benefits that the Salmon or tuna have

    Hi Robin, So excited to start this challenge. A couple of quick questions. We don’t have sunflower butter in New Zealand, is there an alternative? and also sorry to be a pain but what would an alternative be for avocado as I am really not a fan!? thanks again, this is a fantastic site! regards Emily

      No worries at all. You can use almond butter as a sub and if you really can’t stand avocados. Try adding spinach or kale as a sub. I also have TONS of other paleo recipes on my blog that you can switch things out for. Make sure you only choose ones marked PALEO. Talk to you soon xoxoxox

    Hey Robin! I am planning on starting the 30 day challenge but I have one HUGE question to ask: I absolutely love my coffee in the morning, can I still drink it? I have substituted the sugar for locally grown honey and I use almond milk as my creamer. It’s so yummy! I only drink about 12oz a day, a tablespoon of the honey and maybe 1/4c of the milk. Can I keep this as a part of my new routine? Thanks so much!!

          Stick to water just plain water. If you would like to add herbal tea with no sweeteners to your water intake you can definitely do that!

    Hi Robin, the recipe calls for 2 5oz chicken breast. Is this 1 serving? That seems like an awful lot. Did I miss something.

      If you are making this for one person it will be enough for two meals :) I like to make a little more so I can have it for lunch the next day too.

    Hi Robin! I was wondering, when this challenge ends I absolutly will eat bread or cookies or something like that and my sister said that if i do that i will get fat because my body will react different because of the diet, so i dont know if this is true, can you please tell me what could happen if i eat sugar or bread or whatever that i wasn´t supposed to eat after i finish the paleo challenge?

      Yes you will start gaining weight and go back to the way you were. The whole idea of this challenge is to cleanse out your body and live a healthier lifestyle. Also I tried eating the things I used to after the challenge and it made me sick and I actually didn’t want it anymore. Eating paleo has been the best decision and I feel so much better not eating bread and tons of carbs

      I like to look at my hand as a measuring tool. If it is the size of my whole palm before cooking that is great. It doesn’t need to be exact in the oz I provided but I did want to give a guideline

      Yes it is enough for two servings. I like making more of this to have leftovers but you don’t have to use 10 oz.

      I prefer all natural mayo but vegenaise is an option. Make sure you check your labels!!! Good Luck!
